Toffee is hard crunchy candy that’s made with mostly butter, sugar and nuts. English style toffee adds chocolate and almonds. While it may look fairly complicated, it’s actually quite easy to make.
- 1 cup Butter (2 cubes, regular salted)
- 1 cup Granulated Sugar
- Semi-sweet chocolate chips
- raw slivered almonds
- Toast the almonds. Spread out evenly on a baking tray. Top with one quick spray of spray can canola oil. Lightly salt, place in oven at 275 and watch carefully. Just as the nuts begin to brown, remove from the oven and cool. Then line the bottom of a large lasagna tray with the nuts. Set aside.
- Melt the butter in a large saucepan, then add the sugar. Over a medium heat, stir the mixture with a wooden spoon rapidly in a clockwise direction. Never stop stirring. Continue for up to 18 minutes when the toffee is complete by the rich brown color, or follow the smoke and just at the point where the mixture starts to smoke, turn off the flame and stir even faster to prevent burning. Once the smoke has completely stopped, pour the mixture over the nuts.
- Immediately sprinkle the chocolate chips on top of the toffee, and wait 5 minutes for the chocolate to melt, then spread with a knife.
- Sprinkle more nuts on top of the soft chocolate. Grandma King always pulverized the nuts in her coffee grinder, then sprinkled the almond dust over the chocolate.
- Step 5: After the toffee is totally cooled usually the next day break into irregular pieces with your hands. Smaller is better, due to the richness of each bite.
